Many plant-based protein-rich foods on the market are soy-based. Processing has a big impact on how much of the soybean's original components including potentially beneficial compounds end up in the final product and how healthy the product thereafter is. Spices and heating, for example, also contribute to the type of compounds found in the food we eat.
