Beta-Carotene keeps enzymes active under heavy load (IMAGE)

Researchers at TUM have discovered that beta-carotene can improve enzyme functions. When these enzymes are confronted with too many molecules that they are supposed to metabolize, they work more slowly or even stop functioning altogether. Beta-carotene overrides this mechanism known as substrate inhibition. For the study, the researchers mixed an enzyme from the tobacco plant with the substrate the enzyme is meant to metabolize and analyzed the samples using a reading device.
