Giving the cold shoulder to crunchy ice cream — with a dash of cellulose

Ice cream can be a culinary delight, except when it gets unpleasantly crunchy because ice crystals have grown in it. Scientists report that adding cellulose can stop this growth cold — and the additive works better than current ice growth inhibitors in fluctuating temperatures. The findings could be extended to the preservation of other frozen foods and perhaps donated organs and tissues. The researchers will present their results today at ACS Spring 2022.

‘Worm-on-a-chip’ device could someday help diagnose lung cancer

Dogs can use their incredible sense of smell to sniff out various forms of cancer in human breath, blood and urine samples. Similarly, in the lab a much simpler organism, the roundworm C. elegans, wriggles its way toward cancer cells by following an odor trail. Today, scientists report a device that uses the tiny worms to detect lung cancer cells. The researchers will present their results today at ACS Spring 2022.

Waste coffee grounds could someday help detect brain waves

There’s nothing like a steaming cup of joe to give your morning a quick boost. Now, there’s yet another reason to love the beverage. Today, researchers report the first application of used coffee grounds as environmentally friendly electrode coatings for sensitive neurochemistry measurements. The material could eventually help scientists get a better handle on brain activity and detect minute levels of neurotransmitters. The researchers will present their results at ACS Spring 2022.

Journalists who register for the spring meeting of the American Chemical Society (ACS) will have access to more than 12,000 presentations on topics including agriculture and food, energy and fuels, health and medicine, sustainability and more. ACS Spring 2022 is a hybrid meeting being held virtually and in-person in San Diego on March 20-24, with on-demand content available through April 8. The meeting theme is “Bonding through Chemistry.”
